    Oreo Coconut "Truffles"

    We made these “truffles” for Elle’s birthday party to go around her cake, but they are good on their own. There are only three ingredients. They are very easy.

    • 1 pkg oreos
    • 8 oz cream cheese
    • 1 bag of coconut, shredded (frozen or dried is fine)

    Smash the oreos. You can use the food processor if you’re one of those people who likes to wash food processors. I’m lazy, and rubber mallets are fun. :-)

    Drop them in the mixer bowl with the cream cheese and mix until they’re all blended.

    Use a small ice cream scooper or cookie dough baller to plop them out onto waxed paper.

    At this point you begin to make it rain coconuts. Normally we use a frozen shredded coconut that doesn’t have the super sugary taste, but our store was out so we just used the bagged kind that comes back in the baking aisle. It was still tasty.

    You can keep them in the fridge or the freezer until you need them.  I can’t tell you how long they’d keep because there are four of us and they won’t last until tonight. ;)
